Steamed chocolate fruit pudding with choc-fudge sauce

Irresistible Christmas pudding with a decadent chocolate fudge drizzle. You won't be able to resist a second serving!
Ingredients:
  • 125g butter, chopped
  • 375g packet dried mixed fruit
  • 187.50 ml dried cranberries
  • 250.00 ml raisins, chopped
  • 180.00 gm brown sugar
  • 2.50 gm bicarbonate of soda
  • 150.00 gm self-raising flour
  • 187.50 ml plain flour
  • 32.50 gm cocoa powder
  • 2 eggs, lightly beaten
  • 8.80 gm vanilla extract
  • 62.50 ml dark rum
  • 60g dark chocolate, chopped
  • 720.00 gm vanilla custard, to serve
  • 200g dark chocolate, chopped
  • 166.65 gm thickened cream
Instructions:
  • In a saucepan over medium heat, combine butter, mixed fruit, cranberries, raisins, sugar, and 1/2 cup water. Cook until the butter is melted, stirring occasionally. Bring to a boil, then simmer on low for 5 minutes. Remove from heat and stir in bicarbonate of soda. Let it cool before serving.
  • Prepare your 8-cup metal pudding basin by greasing it and then lining the base with baking paper.
  • Sift flours and cocoa into a large bowl. Add the cooled fruit mixture, egg, vanilla, rum, and chocolate. Transfer the mixture into the prepared basin, smooth the top, and secure the lid.
  • In a large saucepan, add boiling water halfway up the side of the basin. Cover and simmer over medium heat for 5 hours, adding water as needed.
  • Take the basin off the heat. Gently lift it from the water bath and let it sit for 10 minutes. Remove the lid and then flip the pudding onto a serving plate.
  • To make the Choc-fudge Sauce, combine chocolate and cream in a microwave-safe bowl. Microwave on HIGH, stirring every 30 seconds with a metal spoon, until melted and smooth (1-2 minutes). Serve with pudding and custard.
