Classic Creme Brulee

Delicious creme brulee with caramelized top using torch or broiler.
Ingredients:
  • 0.75 cup heavy cream
  • 5 teaspoons white sugar
  • 2 large egg yolks
  • 0.5 teaspoon vanilla extract
  • 0.33333334326744 cup white sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and bring some water to a boil.
  • In a saucepan over medium heat, delicately blend cream and 5 teaspoons of sugar until small bubbles form around the edges, about 5 to 6 minutes. Set aside once done.
  • Whisk together egg yolks and vanilla until smooth and pale. Gradually pour in hot cream mixture while whisking constantly until fully incorporated. Strain the mixture through a fine sieve into a bowl, then distribute evenly into four 3-ounce ramekins.
  • Place ramekins in a baking pan on the middle oven shelf. Fill the pan with boiling water halfway up the sides of the ramekins and loosely cover with foil.
  • Bake the custard until it is delicately set and has a slight jiggle, around 25 minutes. Remove from oven, cool to room temperature for about 30 minutes, then chill in the refrigerator for 2 to 3 hours, or overnight.
  • Evenly sprinkle the rest of the sugar over the cooled custards. Using a kitchen torch, move the flame in a circular motion over each ramekin until the sugar melts into a golden brown, bubbly topping. Serve right away.
