Chai Latte Creme Brulee

Elevate classic creme brulee by adding aromatic chai tea flavors and a caramelized sugar topping for a decadent treat that will impress your guests.
Ingredients:
  • 2 cups heavy whipping cream
  • 1 cup half-and-half
  • 1 vanilla bean, split and scraped
  • 4 chai tea bags
  • 1 extra large egg
  • 4 extra large egg yolks
  • 0.5 cup white sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground cardamom
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
  • 0.25 cup white sugar, divided
Instructions:
  • Combine cream, half-and-half, scraped vanilla seeds, and vanilla pod in a saucepan. Heat over medium heat until it nearly boils. Remove from heat, add chai tea bags, cover, and steep for 15 minutes. Squeeze and discard tea bags, as well as the vanilla pod.
  • Preheat the oven to 300°F (150°C).
  • In a bowl, combine eggs, egg yolks, and 1/2 cup sugar. Whisk until smooth. Gradually incorporate the cream mixture, then add in cinnamon, cardamom, cloves, nutmeg, and allspice.
  • Divide the creamy mixture evenly among six 6-ounce ramekins. Boil water in a pot. Set the ramekins in a baking pan and gently pour in enough boiling water to come halfway up the sides of the ramekins.
  • Bake in the preheated oven for 35 to 40 minutes until the desserts are softly set. Remove ramekins from the water bath and refrigerate for 4 hours to overnight before serving.
  • Evenly sprinkle each dessert with approximately 1 1/2 teaspoons of sugar. Lightly brown and caramelize the sugar using a kitchen torch for about 1 minute. Allow the hot topping to cool and harden before serving.
