Spice up your day with an irresistible chai latte cheesecake!
Ingredients:
  • 250g packet ginger nut biscuits
  • 5.00 gm ground cinnamon
  • 1.25 gm ground ginger
  • 1/4 tsp ground cloves
  • 80g butter, melted
  • 500g cream cheese, softened
  • 117.50 gm sour cream
  • 107.50 gm caster sugar
  • 3 eggs
  • 20.00 ml instant coffee powder
  • 20.00 gm boiling water
  • 1/2 tsp ground cardamom
  • 1.25 gm ground nutmeg
Instructions:
  • Preheat your oven to 160°C (140°C fan-forced) and grease a 4cm-deep, 23cm-round loose-based flan tin.
  • Blend ginger nuts, cinnamon, ginger, and cloves in a food processor until finely crumbled. Add butter and blend until well mixed. Press the mixture onto the base of the tin. Chill in the refrigerator for 1 hour.
  • Create the filling by blending cream cheese, sour cream, and sugar until smooth. Then, add the eggs one at a time, continuing to blend until well combined.
  • Combine coffee, boiling water, and cardamom in a heatproof jug, stirring until the coffee is dissolved. Mix the coffee mixture into the cream cheese mixture and pour it over the base. Smooth the top and sprinkle with cinnamon and nutmeg before placing it on a baking tray.
  • Bake until the filling is perfectly set, which should take around 50 minutes. Let it cool, then cover and refrigerate for at least 3 hours before serving.
