Easy puff pastries filled with chai latte whipped cream and drizzled with homemade chocolate sauce. Delicious and indulgent.
Ingredients:
  • 1 cup milk
  • 1/2 cup butter, cut into cubes
  • 1/4 teaspoon salt
  • 1 cup Gold Medal™ all-purpose flour
  • 4 eggs
  • 1 cup heavy whipping cream, well chilled
  • 2 tablespoons sugar
  • 6 tablespoons chai latte-flavored international instant coffee mix
  • 1/2 cup sugar
  • 2 1/2 tablespoons cornstarch
  • 1 tablespoon unsweetened baking cocoa
  • 1/2 cup water
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla
Instructions:
  • Preheat oven to 425°F and prepare a cookie sheet with parchment paper.
  • In a 2-quart saucepan, gently warm the milk, 1/2 cup of butter, and salt until the butter is fully melted. Quickly add the flour all at once and stir until the mixture forms a cohesive ball and pulls away from the sides of the saucepan. Transfer the dough to a food processor, add the eggs, and process until the dough is smooth and well combined.
  • Scoop dough onto the cookie sheet using an ice cream scoop.
  • Bake until golden brown for about 20 minutes. Turn off the oven and let it sit for an additional 10 minutes. Allow to cool completely.
  • Using an electric mixer, whip the cream on medium-high speed until slightly thickened. Gradually add 2 tablespoons of sugar and the chai latte mix while beating on low speed. Increase the speed and continue beating until stiff peaks form. Refrigerate covered until needed.
  • In a 2-quart saucepan, whisk together 1/2 cup sugar, cornstarch, and cocoa. Stir in water and bring to a boil over medium heat. Boil for 1 minute, then whisk in 2 tablespoons of butter. Take off the heat, stir in vanilla, and transfer to a heatproof jar. Chill in the refrigerator.
  • To serve, slice each cream puff in half, then layer the bottom halves with chai latte whipped cream. Sandwich with the top halves of the cream puffs and finish by drizzling them with chocolate sauce.
