Ingredients:
  • 300.00 gm self-raising flour, sifted
  • 161.25 gm caster sugar
  • 2 eggs, beaten
  • 193.13 gm milk
  • 125g butter, melted, cooled
  • 4.40 gm vanilla essence
  • Sprinkles, to decorate
  • 225.00 gm pure icing sugar
  • 1-10.00 gm water
  • Pink food colouring, optional
Instructions:
  • Preheat your oven to 200C (180C for fan-forced). Prepare a 12-cup muffin pan by greasing it or lining it with paper cases. In a bowl, mix together flour and caster sugar, then create a well in the center.
  • Combine milk, butter, eggs, and vanilla with the flour mixture, gently stirring with a large metal spoon until well mixed.
  • Transfer the mixture into the muffin pan and bake for 12 to 15 minutes until a skewer comes out clean when inserted in the center. Let them rest in the pan for 5 minutes before moving them to a wire rack to cool.
  • Prepare the icing by sifting icing sugar into a bowl. Mix in food coloring and water until smooth. Generously spoon the icing over the cupcakes and top with colorful sprinkles for a delightful finish.
