Buttery glazed carrots cooked in a sweet stock reduction for a simple and flavorful side dish.
Ingredients:
  • 1 pound carrots, peeled
  • 2 to 3 tablespoons unsalted butter
  • 1/3 cup chicken stock (use vegetable stock for vegetarian option)
  • 1 heaping tablespoon sugar
  • 1/4 teaspoon white pepper, optional
Instructions:
  • Prepare the carrots: Slice them into uniform 1/8 to 1/4-inch pieces, either discs or diagonally, ensuring even cooking.
  • In a skillet over medium-high heat, melt butter, add carrots, sprinkle with salt, and sauté for 3-4 minutes, stirring occasionally.
  • Combine sugar and white pepper (if using) with the ingredients in the skillet. Pour in the stock, cover, and cook for 3 more minutes.
  • Transform the liquid into a flavorful glaze: Uncover the skillet, increase the heat to medium-high, and gently toss the carrots to allow them to caramelize. Simmer until the liquid has reduced to a glossy glaze. Remove from heat and season with additional salt and sugar to enhance the flavor.
