Try this delightful minestrone soup with fresh veggies, pasta, cannellini beans, and herbs in a tasty tomato broth.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 0.75 cup diced carrot
  • 0.75 cup sliced celery
  • 1.5 teaspoons minced fresh rosemary
  • 1 (15 ounce) can Contadina® Tomato Sauce
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 2.5 cups water
  • 2 cups College Inn® Chicken Broth
  • 1 cup diced zucchini
  • 0.5 cup dry ditalini pasta
  • 0.25 teaspoon black pepper
  • 0.25 cup chopped fresh Italian parsley
  • 1 tablespoon shredded Parmesan cheese, or to taste
Instructions:
  • In a large saucepan over medium-high heat, cook onion, carrot, celery, garlic, and rosemary in hot oil until vegetables start to soften, approximately 5 minutes.
  • Combine the tomato sauce, beans, water, broth, zucchini, pasta, and pepper in a pot and bring to a simmer. Cook for 10 minutes, stirring occasionally, until pasta is tender. Stir in parsley. Serve garnished with Parmesan and extra parsley, if desired.
