Classic Minute® Rice Pudding

Try our highly requested rice pudding recipe that will delight everyone's taste buds with its classic and comforting flavors.
Ingredients:
  • 3 cups milk
  • 1 cup Minute® White Rice, uncooked
  • 0.25 cup sugar
  • 0.25 cup raisins
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
Instructions:
  • In a saucepan, mix together milk, rice, sugar, raisins, and salt. Bring to a boil while stirring continuously. Lower the heat to medium-low and simmer for 6 minutes, stirring occasionally.
  • In a small bowl, lightly beat eggs and vanilla. Gradually add a small amount of the hot mixture to the eggs while stirring. Slowly pour the egg mixture back into the hot mixture while stirring constantly. Cook on low heat for 1 minute until thickened, making sure not to boil. Enjoy!
  • After removing from heat, allow the pudding to rest for 30 minutes. Optionally, dust with cinnamon before serving warm. Any leftovers can be stored in the refrigerator.
