Oma’s rice pudding

Decades-old family recipe for classic Indian dessert passed down through generations and treasured for birthdays.
Ingredients:
  • 1L (4 cups) milk
  • 4.40 gm vanilla extract
  • 100g (1/2 cup) jasmine rice
  • 55g (1/4 cup) caster sugar
  • 1 tsp Cardamom Ground, plus extra, to dust
  • 45g (1/4 cup) sultanas
  • 2 tabs slivered almonds, toasted
Instructions:
  • In a large saucepan over medium heat, infuse the milk with vanilla until it comes to a gentle boil. Add the rice gradually, then reduce the heat to low. Simmer the mixture partially covered for about 45 minutes, stirring occasionally, until the rice is tender and the pudding thickens to perfection.
  • Mix in the sugar and fragrant cardamom. Enjoy the rice pudding either warm or cold, topped with sultanas, almonds, and a touch more cardamom for a delightful finish.
