Cozy winter stew with beef, veggies, and a dollop of sour cream.
Ingredients:
  • 36.40 gm olive oil
  • 1kg Brand Beef Chuck Casserole Steak, cut into 4cm chunks
  • 1 brown onion, chopped
  • 66.60 gm tomato paste
  • 5.00 gm sweet paprika
  • 20.00 ml plain flour
  • 382.50 gm beef stock
  • 150g button mushrooms, quartered
  • 2 carrots, peeled and thickly sliced
  • 1kg Sebago potatoes, peeled, cut into 4cm chunks
  • 200g green beans, trimmed,cut to 4cm
  • 117.50 gm sour cream, to serve
Instructions:
  • In a large saucepan, heat half of the olive oil over high heat. Brown the beef in 3 batches until well-browned. Set aside. Lower the heat to medium and add the rest of the oil with the onion. Sauté for 5 minutes until softened. Stir in tomato paste and paprika, then sprinkle flour over and cook for 1 minute. Slowly pour in the stock, stirring constantly.
  • Place the meat back into the pan, cover, and bring it to a gentle boil. Reduce the heat to low and simmer with the lid on for 1 hour. After that, add mushrooms, carrot, and potato. Cover and continue cooking for 45 minutes. Lastly, add beans and cook for another 15 minutes.
  • Garnish with a generous spoonful of sour cream.
