Easy Thai stir-fry: a beginner's delight to replace take-out cravings with homemade goodness.
Ingredients:
  • 8 ounces medium width rice vermicelli noodles
  • 3 tablespoons vegetable oil
  • 0.25 pound ground chicken
  • 1 teaspoon hot pepper sauce
  • 1 red pepper, thinly sliced
  • 0.5 pound peeled, deveined raw shrimp
  • 3 cloves garlic, minced
  • 2 teaspoons freshly grated gingerroot
  • 0.5 cup vegetable or chicken broth
  • 0.5 cup Heinz Tomato Ketchup
  • 0.25 cup lime juice
  • 3 tablespoons granulated sugar
  • 3 tablespoons fish sauce
  • 1.5 cups bean sprouts
  • 3 green onions, thinly sliced
  • 0.25 cup fresh coriander or parsley leaves
  • chopped peanuts
Instructions:
  • Pour boiling water over the noodles, allowing them to sit for 5 minutes. Drain thoroughly and set aside.
  • In a hot wok or deep skillet, sizzle half of the oil and cook the crumbled chicken with hot sauce until browned, about 3 to 5 minutes. Transfer to a platter.
  • In a heated pan, combine the remaining oil and peppers, stir-fry for 3 minutes. Add shrimp and stir-fry for an additional 2 minutes. Mix in garlic, ginger, broth, ketchup, lime juice, sugar, and fish sauce. Allow it to come to a boil. Stir in noodles and reserved meat, toss to combine, and heat through.
  • Gently mix in sprouts. Top with onions, coriander, and peanuts.
