Classic roast beef with tomato and red wine gravy recipe

Irresistible roast beef with cherry tomatoes and red wine gravy.
Ingredients:
  • 1 (about 1.9kg) No Added Hormones Beef Family Roast or Blade Roast, at room temperature
  • 1 whole garlic bulb, halved crossways
  • 1kg Kent pumpkin, unpeeled, seeded, thickly sliced
  • 3 garlic cloves, unpeeled
  • 500g vine-ripened cherry tomatoes
  • 1 brown onion, thinly sliced
  • 40.00 ml plain flour
  • 125ml red wine
  • 500ml beef stock
  • 400g can diced tomatoes
  • 200g green beans, trimmed
  • Oregano leaves, to serve
Instructions:
  • Preheat the oven to 200°C. Tie the beef with kitchen string at 2cm intervals and season generously. In a flameproof roasting pan, heat 1 tablespoon of oil over high heat. Sear the beef, turning, for 5 minutes until evenly browned. Remove the pan from heat and arrange halved garlic around the beef.
  • Roast the beef for 1 hour (or 15 mins per 500g) until it reaches an internal temperature of 60-65°C for rare or to your desired doneness.
  • While the beef is roasting, coat the pumpkin and garlic cloves in the remaining oil in a bowl. Spread them out on a baking tray and roast for 40 minutes until tender. Then, add the tomatoes and roast for another 15 minutes until softened.
  • Move the beef and halved garlic to a beautiful platter and cover it gently with foil. Let it rest for 10 minutes.
  • Peel and crush garlic cloves. Remove excess fat from roasting pan, leaving 1 tbs in the pan. Heat the pan over medium heat. Add onion and crushed garlic. Cook for 5 mins until onion softens. Stir in flour and cook for 1 min until the mixture is grainy and bubbling. Add wine, stock, and diced tomato. Bring to a boil, then lower heat to medium. Simmer for 5-10 mins until the gravy thickens.
  • Cook beans in a large pot of boiling water for 5 minutes, or until they are vibrant green and tender. Then, drain thoroughly.
  • Place the roasted vegetables and beans elegantly around the beef and garlic on the serving platter. Sprinkle with fresh oregano leaves, then slice the beef thickly and serve with the delicious gravy.
