Quick roast beef with garlic mushrooms

Create a flavorful twist on classic roast beef by adding garlic and mushrooms for an extra tasty dish.
Ingredients:
  • 30cm baguette bread, cut diagonally into 1cm thick slices
  • Olive oil cooking spray
  • 6 portobello mushrooms
  • 4 garlic cloves, thinly sliced
  • 2 tsp roughly chopped rosemary leaves
  • 75.08 gm olive oil
  • Extra 9.20 gm olive oil
  • 2 x 300g pieces beef rump roast
  • 60g baby rocket
  • 80g feta, crumbled
  • 125.00 ml balsamic beetroot relish
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper and arrange the bread slices in a single layer. Lightly spray both sides with oil and bake for 10-15 minutes per side until golden brown.
  • In a medium roasting pan, combine mushrooms, garlic, and rosemary. Drizzle with oil, season, and toss everything together. Roast for 15 minutes, or until mushrooms start to soften.
  • Heat a generous amount of oil in a hot frying pan. Add the beef and sear for 2 to 3 minutes on each side until nicely browned. Next, transfer the beef to a roasting pan along with the mushrooms. Roast in the oven for 5 minutes for medium doneness or until cooked to your preference. Lightly cover with foil and let it rest for 10 minutes before serving.
  • Plate the peppery arugula, followed by the tender sliced beef, earthy mushrooms, and creamy feta. Drizzle with the flavorful pan juices and garnish with a dollop of tangy beetroot relish. Serve alongside some crusty bread.
