Whip up a fast and flavorful roast beef with spicy parmesan cauliflower.
Ingredients:
  • 20.00 ml sage leaves, finely chopped
  • 80ml olive oil
  • 40.00 ml caramelised balsamic vinegar
  • 800g beef eye fillet, trimmed, tied at 3cm intervals
  • 1 small cauliflower, cut into florets
  • 40g parmesan
  • 1 long red chilli, finely chopped
  • 150g wild rocket leaves
  • Juice of 1 lemon
Instructions:
  • Preheat the oven to 200C for the perfect cooking temperature.
  • Mix together the garlic, sage, 1 tablespoon of oil, and 1 tablespoon of caramelised balsamic in a bowl. Coat the beef with the mixture. Arrange the beef on one end of a baking paper-lined tray. Spread the cauliflower on the remaining tray space and lightly drizzle with 2 tablespoons of oil.
  • After roasting for 15 minutes, take the tray out of the oven and generously sprinkle the cauliflower with Parmesan cheese, chili, and the remaining tablespoon of caramelized balsamic vinegar. Place the tray back in the oven and roast for an additional 12-15 minutes until the cauliflower is golden and the beef is cooked to medium. Let the beef rest, lightly covered with foil, for 5 minutes before serving.
  • Combine the cauliflower and rocket in a bowl. In another bowl, mix together lemon juice, beef resting juices, and the remaining 1 tablespoon of oil. Pour this dressing over the cauliflower salad.
  • Slice the beef thinly. Serve by dividing the salad among bowls and topping it with the sliced beef.
