Impress with this juicy Onion-Crusted Beef Prime Rib - seasoned with garlic, onion, and pepper for a perfect crust. Quick prep, high roast for 15 mins. Pair with mashed potatoes or veggies for a festive meal.
Ingredients:
  • 1 boneless beef (prime) rib roast (4 lb)
  • 1/2 teaspoon garlic powder
  • 3 tablespoons dried minced onion
  • Salt and fresh ground black pepper
Instructions:
  • Place the beef on a rack in a shallow roasting pan with the fat side up. Generously sprinkle garlic powder, dried onion, salt, and pepper on all sides and underneath the beef. Allow the beef to sit at room temperature for at least 20 minutes before roasting.
  • Preheat oven to 450°F and roast beef uncovered for 15 minutes.
  • Lower the oven temperature to 325°F and roast for 1 to 1.5 hours until a meat thermometer inserted into the center of the beef reads 135°F (medium doneness). Note that the temperature will increase by 5°F to 10°F after taking it out of the oven, so adjust cooking time accordingly.
  • Allow the beef to rest for 15 to 20 minutes before slicing.
