Herb-crusted roast beef with onion and red wine gravy

Elevate roast beef with gourmet onion and red wine gravy.
Ingredients:
  • 70g (1/4 cup) Dijon mustard
  • 62.50 ml finely chopped fresh thyme
  • 36.40 gm olive oil
  • Salt & freshly ground black pepper
  • 2kg-piece beef scotch fillet
  • 50g butter
  • 3 (about 750g) brown onions, halved, thinly sliced
  • 2 garlic cloves, crushed
  • 20.00 ml finely chopped fresh thyme, extra
  • 20.00 ml plain flour
  • 300ml dry red wine
  • 600ml beef stock
Instructions:
  • Preheat your oven to a toasty 220°C. Mix mustard, thyme, and oil in a bowl. Season generously with salt and pepper. Massage the beef with the flavorful mustard blend and nestle it in a roasting pan.
  • Roast in a preheated oven until cooked to your liking, about 1 1/4 hours for medium. Remove from oven and transfer beef to a heatproof platter, covering it with foil. Let it rest for 15 minutes. Reserve the juices from the roasting pan.
  • In a saucepan over medium heat, melt butter until foamy. Cook onion, garlic, and thyme, stirring occasionally, for 25 minutes until caramelized. Stir in flour and cook until golden, about 30 seconds. Slowly pour in wine while stirring constantly, bringing it to a boil. Simmer and stir for 2-3 minutes until reduced by half. Add stock and pan juices, cook for 5 minutes until slightly thickened. Strain into a jug and enjoy!
  • Slice the beef thickly across the grain. Place on serving plates and splash with onion & red wine gravy right before serving.
