Festive French Canadian tourtière: double-crusted meat pie with savory pork, beef, onion, and spices - a holiday must-have!
Ingredients:
  • 1 pound lean ground pork
  • 0.5 pound lean ground beef
  • 1 onion, diced
  • 1.5 teaspoons salt
  • 0.5 teaspoon dried thyme, crushed
  • 0.25 teaspoon ground sage
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon ground cloves
  • 1 (14.1 ounce) package double-crust pie pastry, thawed
Instructions:
  • In a saucepan, fuse pork, beef, onion, garlic, water, salt, thyme, sage, black pepper, and cloves. Stir occasionally and bring to a boil over medium heat. Lower heat and simmer until meat is cooked, approximately 5 minutes. Let it cool to room temperature.
  • Heat your oven to a toasty 425 degrees F (220 degrees C).
  • Fill pie crust with savory meat mixture. Seal with top crust by pinching edges together. Create steam vents by cutting slits in the top crust. Shield the edges with strips of aluminum foil.
  • Bake in the preheated oven for 20 minutes with foil on, then bake uncovered until golden brown, 15 to 20 minutes. Allow to cool for 10 minutes before slicing.
