Traditional French-Canadian meat pie with a flavorful twist from cloves and chicken seasoning. Make a big batch and freeze for easy holiday meals.
Ingredients:
  • 8 pounds ground pork
  • 8 pounds ground beef
  • 4 cups finely chopped onion
  • 6 cups water
  • 2.5 tablespoons salt
  • 2 teaspoons pepper
  • 2 teaspoons allspice
  • 1.75 teaspoons ground cloves
  • 1 teaspoon ground cinnamon
  • 0.25 cup liquid chicken seasoning
  • 8 (15 ounce) packages pastry for double-crust pie
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Combine the pork, beef, onion, and water in a large pot. Season generously with salt, pepper, allspice, cloves, cinnamon, and chicken seasoning. Bring the mixture to a boil, then lower the heat and simmer for 30 minutes.
  • Pour the flavorful liquid from the pot into a bowl. Set aside the tasty meat mixture in another bowl to chill. Refrigerate the bowl with the liquid for 1 hour until the fat solidifies on top.
  • Remove and discard any fat that has solidified on top of the chilled liquid. Divide the meat mixture evenly into the pie crusts, then pour 1 tablespoon of the reserved liquid over each pie to ensure they stay moist. Place the top crust over each pie and seal the edges by pinching them together. Make small cuts in the top crust to allow steam to escape during baking.
  • Bake in a preheated oven until beautifully golden for about 50 minutes. Serve right away or freeze for later use.
