Family heirloom pork pie, a Christmas tradition adored by all.
Ingredients:
  • 2.5 pounds lean ground pork
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground cinnamon
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 1 bay leaf
  • 4 baking potatoes, peeled and cubed
  • 2 (15 ounce) packages refrigerated pie crusts
Instructions:
  • Combine ground pork, cloves, cinnamon, onion, salt, celery, bay leaf, and water in a large saucepan. Simmer on medium-low heat for approximately 3 hours until the water cooks off. Remove from heat, discard the bay leaf, and enjoy!
  • As the pork nears completion, boil potatoes in a saucepan filled with enough water to cover. Cook for about 10 minutes until tender, then drain and mash. Mix the mashed potatoes into the pan with the finished pork until well combined.
  • Preheat the oven to 375 degrees F (190 degrees C). Prepare two 9 inch pie plates with bottom crusts. Divide the pork filling evenly between the two crusts. Top with another crust and seal the edges by fluting.
  • Bake in the preheated oven for 45 minutes or until the crust turns golden brown.
