Indulge in a classic, crispy-skinned roast chicken.
Ingredients:
  • 1 large (about 2kg) Family Feast Roast chicken
  • 20g butter, melted
  • 4 garlic cloves, bruised
  • 2 fresh bay leaves
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 125ml white wine
  • 250ml chicken stock
  • 12 pickling onions
  • 12 baby coliban (chat) potatoes
  • Fresh bay leaves, extra, to serve
Instructions:
  • Preheat your oven to 180°C. Rinse the chicken cavity with cold water and pat dry inside and out using paper towel.
  • Prepare the roasting pan by laying the chicken in it. Gently coat the chicken skin with a mixture of oil and butter. Stuff the chicken cavity with garlic, bay leaves, rosemary, and thyme. Season generously with salt and pepper. Surround the chicken with onions and potatoes. Finish by pouring wine and chicken stock over everything in the pan.
  • Roast the chicken in a preheated oven, occasionally basting with pan juices, for 1 1/2-2 hours until the thigh juices run clear when pierced with a skewer.
  • Allow the dish to cool and rest at room temperature for 10 minutes before presenting.
