Impress your friends with a homemade roast chicken that's crispy on the outside and juicy on the inside. This easy recipe requires just 10 minutes of prep and cooks at a high heat of 220 degrees for 1 hour, resulting in a perfect balance of crispy skin and moist meat. Ingredients:
  • 1.6kg whole chicken
  • 1 lemon, halved
  • 9.20 gm Classic Olive Oil
Instructions:
  • Preheat the oven to 220C. Grease a roasting pan and place a wire rack inside. Trim excess fat from the chicken, discard the neck, rinse the chicken thoroughly under cold water, and pat dry with paper towels. Finally, season the cavity with salt and pepper.
  • Squeeze fresh lemon juice over the chicken, massaging it into the skin. Place the squeezed lemon halves inside the chicken cavity and secure the legs together with kitchen string.
  • Rub the chicken with oil, seasoning generously with salt and pepper. Place the chicken breast-side up on a roasting rack in a pan. Roast for 1 hour until the juices run clear when a skewer is inserted into the thigh. Allow the chicken to rest covered for 10 minutes. Serve with pan juices and optional roast vegetables.
