Slow-cooked comfort meal of tender, flavorful roast chicken with mashed potatoes. Perfect for dinner and delicious as leftovers on a buttered roll or in a pie.
Ingredients:
  • 18.20 gm olive oil
  • 800g chicken breast fillets
  • 1 large brown onion, cut into thin wedges
  • 90.00 ml chicken gravy powder
  • 185ml (3/4 cup) cooking cream
  • 24.40 gm Worcestershire sauce
  • 2 tsp chicken stock powder
  • 3 thyme sprigs
  • Mashed potato, to serve
  • Cooked peas, to serve
Instructions:
  • In a hot frying pan, sear the chicken in oil until beautifully golden for about 5 minutes while turning halfway. Then, sauté the onion in the same pan until soft and lightly golden for 3-4 minutes. Transfer both to the slow cooker for a flavorful finish.
  • In a large heatproof jug, combine gravy powder with boiling water to make 375ml (1 1/2 cups). Add cream, Worcestershire sauce, stock powder, and thyme. Mix well. Pour over chicken in the slow cooker. Cover and cook on low for 6 hours.
  • Switch off the slow cooker. Shred the chicken using two large forks, then stir it together with the gravy. Serve with mashed potatoes and peas.
