Apple, gin and juniper tarte tatin

Elevate traditional French dessert with a modern touch of gin and juniper berries for a perfect party treat.
Ingredients:
  • 375g frozen butter puff pastry, thawed
  • 150g caster sugar
  • 125ml gin
  • 1 vanilla bean, split, seeds scraped
  • 1 1/2 tsp juniper berries
  • 3 Granny Smith apples, peeled, cores removed, quartered
  • 50g unsalted butter
  • Vanilla ice cream, to serve
Instructions:
  • Preheat the oven to 180C. Shape the pastry into a 24cm round.
  • In a 22cm ovenproof frypan over medium heat, combine sugar, gin, vanilla pod and seeds, and juniper. Stir until sugar is dissolved and cook until light golden in color. Place apples in the pan core-side up and cook until lightly golden. Add butter and take the pan off the heat.
  • Place the pastry over the apples, then delicately fold in the edges using metal tongs. Bake until the pastry turns golden and crispy, around 20 minutes.
  • Flip the dish onto a plate immediately while it's hot and enjoy with a scoop of ice cream.
