Elevate your Christmas mince pies with a gin-infused twist and crispy air fryer crust!ồ
Ingredients:
  • 1 small granny smith apple, peeled, cored, coarsely grated
  • 165g (3/4 cup, firmly packed) brown sugar
  • 90g (1/2 cup) sultanas
  • 45g (1/4 cup) currant
  • 45g (1/4 cup) blanched almonds, toasted, finely chopped
  • 40.00 ml red glace cherries, finely chopped
  • 40.00 ml mixed peel
  • 2.50 gm mixed spice
  • 1.25 gm ground cinnamon
  • 25g butter, melted
  • 60ml (1/4 cup) gin
  • Icing sugar, to dust
  • 300g (2 cups) plain flour
  • 55g (1/4 cup) caster sugar
  • 185g butter, chilled, chopped
  • 1 egg, separated
  • 60ml (1/4 cup) milk
Instructions:
  • Squeeze excess moisture from the apple using your hands, then place it in a bowl. Add brown sugar, sultanas, currants, almonds, cherries, peel, mixed spice, cinnamon, butter, and gin. Mix thoroughly. Let it sit for 1 hour to enhance the flavors.
  • In a food processor, combine flour, sugar, and butter until mixture looks like fine breadcrumbs. Add egg yolk (set aside the egg white) and milk, then pulse until dough begins to form.
  • Transfer the dough to a dusted surface and knead it until smooth. Roll out the pastry between 2 pieces of parchment paper until it's 3mm thick. Cut 18 discs using an 8cm round pastry cutter. Gently place each disc into eighteen 2.5cm deep, 4cm (base), 7cm (top) loose-based patty pans.
  • Flatten remaining pastry between 2 sheets of baking paper to 3mm thickness. Cut out 18 circles using a 7cm pastry cutter. Drain excess liquid from the fruit mixture and fill the pastry cases evenly.
  • Whisk egg white until foamy. Lightly coat pastry discs with egg white. Place pastry discs, egg white side down, on top of pastry cases. Gently press edges to seal, and trim off any extra pastry.
  • Roll out any excess pastry and cut out 18 stars using a 6.5cm star cutter. Brush the tops with the remaining egg white and place a star on each pie, brushing the stars with egg white as well.
  • Preheat the 7-litre air fryer to 160C for 3 minutes. Gently place 6 mince pies in the basket and cook for 15 minutes until the pastry is golden and crisp. Repeat with the remaining pies in two more batches. Allow the pies to cool completely on a wire rack.
  • Sprinkle the pies with a light dusting of icing sugar before serving.
