Impress guests with succulent roast lamb.
Ingredients:
  • 2.6kg Lamb Whole Leg Roast
  • 60ml olive oil
  • 2 garlic cloves, cut into small strips
  • 2 whole garlic bulbs, halved horizontally
  • 3 rosemary stems, cut into small sprigs
  • 4 rosemary stems, extra
  • Coles Brand Coleslaw Supreme salad mix, to serve
  • Balsamic dressing, to serve
  • Coles Brand Pasta Salad, to serve
Instructions:
  • Preheat your oven to 200 degrees Celsius.
  • - Use a small knife to make slits all over the lamb, then generously rub oil and season. - Insert 1 piece of garlic and 1 small sprig of rosemary into each slit. - Place extra rosemary, halved garlic bulbs, and lamb in a disposable baking tray. - Roast for 2 1/2 hours for medium doneness or to your preferred level of doneness.
  • Place the succulent lamb onto a plate and elegantly cover it with foil. Let it rest for a luxurious 20 minutes to enhance its flavors.
  • Drizzle the coleslaw mix with dressing and serve the lamb with the coleslaw and pasta salad.
