Quick and versatile tomato sauce recipe perfect for beginners to customize with additional ingredients for endless variations.
Ingredients:
  • 2 cloves of garlic
  • 1 fresh red chilli
  • 1 bunch of fresh basil (30g)
  • 300 g dried spaghetti
  • olive oil
  • 1 x 400 g tin of plum tomatoes
  • 80 g Parmesan cheese Grana Padano or vegetarian alternative
Instructions:
  • Peel and finely slice the garlic with the chili. If you prefer milder sauce, halve and deseed the chili. Set basil leaves aside and finely chop the stalks. Cook the spaghetti according to package instructions in boiling salted water. Meanwhile, heat oil in a large saucepan over medium heat. Add garlic, chili, and basil stalks; cook until garlic slightly browns. Add most basil leaves and tomatoes. Increase heat, stir for 1 minute. Season with salt and pepper if needed. Drain spaghetti, saving a mugful of cooking water. Add spaghetti to sauce, stir well. Add pasta cooking water if needed. Season to taste. Serve pasta in bowls or a large dish. Tear remaining basil leaves and grate Parmesan on top. Enjoy!
