Spaghetti fritters with salami & zucchini

Elevate a classic favorite with this simple and quick weeknight twist.
Ingredients:
  • 200g spaghetti
  • 3 eggs, lightly beaten
  • 35g plain flour
  • 1 garlic clove, crushed
  • 80g parmesan
  • 80g salami, chopped
  • 2 large zucchini, grated
  • Olive oil, to shallow-fry
  • 100g semi-dried tomatoes, finely chopped
  • 220g chutney
  • Green salad leaves, to serve
Instructions:
  • Prepare the pasta as directed on the package, then strain and allow to slightly cool.
  • Combine egg, flour, garlic, and parmesan in a bowl, stirring well. Mix in salami, zucchini, and pasta. Season to taste and toss until all ingredients are well combined.
  • In a deep frypan over medium-high heat, heat the oil. Scoop small handfuls of the pasta mixture and gently submerge them into the hot oil. Fry the fritters in batches for 2 minutes on each side until they turn crispy and golden. Place on paper towel to drain.
  • Mix the semi-dried tomatoes with the flavorful tomato chutney. Serve the fritters garnished with chutney and a side of salad.
