Spaghetti carbonara fritters

Turn leftover pasta into savory carbonara fritters in 30 minutes.
Ingredients:
  • 2 eggs, lightly whisked
  • 40g (1/2 cup) finely grated parmesan, plus extra shaved parmesan, to serve
  • 300g spaghetti, broken in half, cooked, cooled
  • 4 rindless bacon rashers
  • Baby French kale, to serve
Instructions:
  • In a large bowl, mix the eggs and grated parmesan, then add the cooked spaghetti and toss until well coated.
  • In a large non-stick frying pan over medium heat, heat vegetable oil. Shape some spaghetti mixture into fritters using tongs, each about 12cm in diameter, and place in the pan. Cook until golden and crisp underneath for 2-3 minutes. Flip fritters and cook for another 2-3 minutes until golden and crisp. Transfer to a paper towel-lined plate to keep warm. Repeat with remaining spaghetti mixture.
  • Spray a large frying pan with oil and heat over medium heat. Cook the bacon until golden and crispy, turning once, for about 5 minutes.
  • Arrange the fritters on plates, then garnish with crisp bacon, tender baby kale, and an extra sprinkle of shaved Parmesan cheese.
