Spaghetti carbonara

Family favorite: Classic spaghetti carbonara.
Ingredients:
  • 375g Garofalo Spaghetti
  • 18.20 gm Brand Pure Olive Oil
  • 200g Short Cut Bacon, cut into 1cm pieces
  • 2 garlic cloves, crushed
  • 40.00 ml chopped flat-leaf parsley
  • 126.25 gm Simply Less Light Thickened Cream
  • 2 eggs
  • 1 egg yolk
  • 125.00 ml finely grated parmesan
  • Mixed salad leaves, to serve
Instructions:
  • Boil spaghetti in a generously salted large saucepan until perfectly cooked. Drain the pasta.
  • Heat oil in a deep frying pan over high heat. Fry bacon until crispy and golden, about 4-5 minutes. Stir in garlic and cook for 1 minute. Add parsley, then remove from heat.
  • In a jug, vigorously whisk together cream, eggs, and yolk until smooth. Stir in half of the parmesan and season generously with pepper. Add the cream mixture to the pasta in the pan and toss everything together until well combined.
  • Serve the spaghetti mixture in individual bowls, sprinkle with the remaining parmesan, add a touch of pepper for seasoning, and enjoy with a side of salad.
