25 Minute Cheesy Bacon Pasta: A deliciously quick Italian meal.
Ingredients:
  • 1 package (16 oz) spaghetti
  • 1 clove garlic, finely chopped
  • 6 slices bacon, cut into 1-inch pieces
  • 3/4 cup fat-free cholesterol-free egg product
  • 1 tablespoon olive or vegetable oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup freshly grated Romano cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon pepper
  • Additional freshly grated Parmesan cheese, if desired
  • Freshly ground pepper, if desired
Instructions:
  • Cook spaghetti in a 4-quart Dutch oven following the package instructions.
  • In a 10-inch skillet, sizzle garlic and bacon over medium heat until bacon is crispy; then drain excess grease.
  • Combine egg product, oil, 1/2 cup Parmesan cheese, Romano cheese, parsley, and 1/4 teaspoon pepper in a small bowl.
  • After draining the spaghetti, bring it back to the Dutch oven. Mix in the bacon and egg mixture. Cook on low heat, stirring constantly, until the spaghetti is coated with the egg mixture. Remove from heat and garnish with extra Parmesan cheese and freshly ground pepper before serving.
