Kid-friendly pasta dish - interactive and versatile base for creative toppings.
Ingredients:
  • 1 bunch of fresh basil
  • 1 medium onion
  • 2 cloves of garlic
  • 1 kg ripe tomatoes or 2 x 400g tins of quality chopped tomatoes
  • olive oil
  • 1 tablespoon red wine or balsamic vinegar
  • 480 g dried wholewheat spaghetti
  • 15 g Parmesan cheese
Instructions:
  • - Tear basil leaves onto a chopping board, reserving some for garnish. Roughly chop the rest along with the stalks. - Peel and finely slice the onion and garlic. Cut the tomatoes in half if fresh, then chop them. If using tinned tomatoes, open carefully. - Heat olive oil in a saucepan, add onion, and cook until soft and golden. Stir in garlic and basil stalks, then add tomatoes and vinegar. Season and cook for 15 minutes. - Add chopped basil leaves to the sauce and simmer on low heat. - Boil water in a large pot with a pinch of salt. Cook spaghetti until al dente as per packet instructions. Reserve some cooking water. - Drain spaghetti and return to pot. Mix in the sauce, adding pasta water if needed. - Serve with reserved basil leaves and grated Parmesan cheese. Enjoy your meal!
