Clementine roasted carrots

Try the delightful combination of sweet carrots and tangy clementines with fragrant rosemary for a unique flavor experience.
Ingredients:
  • 1 kg small mixed-colour carrots heirloom if you can get them
  • olive oil
  • 2 sprigs of fresh rosemary or thyme
  • 2 clementines
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Clean and trim the carrots, keeping a bit of the green tops on. Boil in salted water for 5 minutes, drain, then transfer to a large roasting tray. Drizzle with 1 tablespoon of oil, sprinkle with sea salt and black pepper, toss to coat, and roast for 1 hour. While roasting, pluck the rosemary leaves. When done, take out the tray, drizzle with clementine juice, sprinkle with rosemary leaves, toss, and roast for another 10 minutes until beautifully golden.
