Decadent clootie dumpling with suet, currants, raisins, mixed spice, and a touch of molasses, embraced in tradition and Scottish charm.
Ingredients:
  • 4 cups self-rising flour
  • 1.75 cups dried currants
  • 1.6666667461395 cups raisins
  • 0.25 pound shredded suet
  • 1 cup dry bread crumbs
  • 1 cup white sugar
  • 1 egg, lightly beaten
  • 1 teaspoon mixed spice
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon molasses
Instructions:
  • Boil a large pot of water.
  • Combine flour, currants, raisins, suet, bread crumbs, and sugar in a large bowl. Mix in egg and milk with mixed spice, baking powder, salt, and molasses until a wet dough forms.
  • 1. Soak a sturdy cotton cloth in boiling water, then dust it lightly with flour. 2. Place the dough in the middle of the cloth, bring two opposite corners together to create a ball shape, ensuring there is space for the dumpling to rise, and securely tie with twine to seal.
  • Cook the dumpling in gently boiling water for 3 1/2 hours, topping up water as needed. Once cooked, remove from water, unwrap, and dry in front of a fire or in a 150-degree oven until dry. Serve.
