Clove-Spiced Plum Jam

Seasonal clove-spiced plum jam, ideal for sharing.
Ingredients:
  • 5 whole cloves
  • 8 cups pitted and quartered plums
  • 8 tablespoons lemon juice
  • 8 tablespoons water
  • 1 (1.75 ounce) package powdered fruit pectin
  • 8 cups white sugar
Instructions:
  • Encase cloves in cheesecloth or a spice sack; let it sit.
  • Check 9 glass jars for cracks and rings for rust, throwing away any damaged ones. Keep jars in simmering water until jam is prepared. Clean new lids and rings in warm, soapy water.
  • In a large saucepan over gentle heat, mix plums, lemon juice, water, and pectin. Let it gently come to a boil.
  • Combine sugar and cloves in a pot. Stir constantly until sugar dissolves and mixture hits 220°F (104°C), about 3 to 5 minutes. Remove and discard cloves.
  • Transfer the jam into clean jars. Clean any spills off the edges of the jars, then seal with lids. Let the jars cool and self-seal on a damp towel; you'll hear a satisfying pop as the jam sets, usually takes about 2 hours.
