Magic Impossible Pie: Easy, foolproof recipe creates its own crust and creamy topping.
Ingredients:
  • 4 eggs
  • 180.00 gm brown sugar, firmly packed
  • 8.80 gm vanilla extract
  • 100g butter, melted, cooled
  • 515.00 gm milk
  • 125.00 ml plain flour
  • 85.00 gm desiccated coconut
  • 2 tsp lime rind, finely grated
  • 126.25 gm pure cream, whipped
  • 250g halved strawberries
Instructions:
  • Preheat the oven to 180C (160C fan-forced) and grease a 6-cup, 5cm-deep, 20cm square ovenproof dish.
  • Beat eggs, sugar, vanilla, butter, milk, flour, coconut, and lime rind with an electric mixer until combined, about 1 minute. Transfer mixture to prepared dish.
  • Bake for 50 minutes, or until a skewer inserted into the center of the pie comes out clean. Serve with a dollop of fresh whipped cream and juicy strawberries.
