Barbecue golden perfection prawns.
Ingredients:
  • 42.00 gm soy sauce
  • 20.00 ml lime rind, finely grated
  • 65.63 gm lime juice
  • 3 garlic cloves, crushed
  • 1/2 tsp cracked black pepper
  • 1kg medium green prawns, peeled, tails intact, deveined
  • 65.00 gm shredded coconut, toasted
  • 82.50 ml peanuts, roasted salted , chopped
  • 57.20 gm honey
  • Sweet chilli dipping sauce, to serve
  • Fresh coriander sprigs, to serve
  • Lime wedges, to serve
Instructions:
  • In a glass or ceramic bowl, mix together soy sauce, lime zest, lime juice, garlic, and pepper. Add prawns and coat them well. Cover and refrigerate for 20 minutes.
  • Preheat a barbecue plate or chargrill over medium heat. Grill prawns for 2 to 3 minutes per side until golden and cooked through.
  • Combine the coconut and peanuts in a bowl. In a separate bowl, place the honey. Coat the prawns first in honey, then in the coconut mixture. Transfer the prawns to a plate and serve immediately with Sweet Chilli Dipping Sauce, coriander sprigs, and lime wedges.
