Award-winning 2009 recipe: Make decadent chocolate-coconut candy bars using simple cookie mix. Surprisingly delicious!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Double Chocolate Chunk Cookie Mix
  • 1/4 cup vegetable oil
  • 2 tablespoons water
  • 1/2 cup butter, softened
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 1 teaspoon vanilla
  • 6 cups powdered sugar
  • 1 1/2 cups coconut
  • 1/2 cup finely chopped blanched almonds
  • 1/2 cup whipping cream
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1/2 cup butter (do not use margarine)
Instructions:
  • Preheat the oven to 350°F. Combine cookie base ingredients in a large bowl until a soft dough forms. Press the dough into the bottom of an ungreased 13x9-inch pan. Bake for 12 minutes. Allow to cool completely for about 30 minutes.
  • In a large bowl, use an electric mixer to blend softened butter, milk, and vanilla until smooth. Slowly mix in powdered sugar, then fold in coconut and almonds until fully combined. Spread the filling evenly over the cooled cookie base. Chill in the refrigerator for about 1 hour until the filling sets.
  • In a 2-quart nonstick saucepan, gently melt the topping ingredients over medium-low heat, stirring constantly until smooth. Allow to cool for about 10 minutes until lukewarm.
  • Spread the topping over the filling until completely covered. Chill in the refrigerator, uncovered, for about 2 hours until firm. Let it sit at room temperature for 10 minutes before cutting into bars. Store the bars covered in the refrigerator.
