Wholesome coconut buckwheat pancakes for a delicious breakfast. Customize with choice toppings!
Ingredients:
  • 1 cup buckwheat groats
  • 1.5 cups boiling water
  • 1 cup spelt flour
  • 0.5 cup unsweetened shredded coconut
  • 2 teaspoons baking powder
  • 1 cup soy milk
  • 1 egg
  • 2 tablespoons oil
  • 2 tablespoons honey
  • cooking spray
Instructions:
  • In a bowl, add buckwheat groats and cover with boiling water. Allow groats to soak for 10 minutes to absorb water, retaining any excess water if needed.
  • Preheat a skillet over medium heat.
  • Combine flour, coconut, and baking powder in one bowl. In another bowl, mix milk, egg, oil, and honey. Gently fold in the buckwheat groats mixture and flour mixture into the milk mixture until just combined.
  • 1. Lightly coat skillet with cooking spray. 2. Pour 1/4 to 1/3 cup of batter for each pancake into the heated skillet. 3. Cook until bubbles form and edges are dry, approximately 2 minutes. 4. Flip and cook for another 2 minutes until browned. 5. Continue with remaining batter.
