Delicious coconut curry fish stew for two - simple and flavorful with chunks of white fish and diced tomato.
Ingredients:
  • 1.5 teaspoons curry powder
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground turmeric
  • 0.25 teaspoon olive oil
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 4.25 ounces coconut milk, divided
  • 4.25 ounces water, divided
  • 3.5 ounces cod, cut into bite-size pieces
  • 1 large tomato, diced
Instructions:
  • In a skillet over medium heat, toast curry powder, ground ginger, and ground turmeric until fragrant, about 5 minutes. Stir in olive oil and garlic to form a paste.
  • Sauté onion with spices until tender, about 5-7 minutes. Pour in half the coconut milk and water, simmer for 5 minutes. Gently add cod, cook until firm, about 5 minutes. Stir in tomato, the rest of the coconut milk, and water, cook until tomato is softened, around 5 minutes.
