Enhance poached fish with a tropical twist of coconut.
Ingredients:
  • 400ml coconut cream
  • Zest and juice of 1 lemon
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 2 tsp sambal oelek
  • 4 x 120g firm white fish fillets
  • 250.00 ml baby spinach leaves
  • Steamed rice, to serve
  • Green onions, shredded, to serve
  • Chilli, sliced (optional)
Instructions:
  • In a large frying pan, mix together 400ml coconut cream, finely grated zest and juice of 1 lemon, 1 tablespoon fish sauce, 1 tablespoon brown sugar, 2 teaspoons sambal oelek, and 1 crushed garlic clove. Bring to a boil over high heat, stirring constantly.
  • Lower the heat and gently place 4 x 120g firm white fish fillets into the pan. Cover and simmer for 8-10 mins until the fish easily flakes with a fork test.
  • Add baby spinach leaves to the pan and stir until wilted. Serve fish on a bed of steamed rice, topped with sauce, green onions, and sliced chili for an extra kick.
