Salmon poached in tangy Asian coconut broth for a delightful, flavorful dish loved by all.
Ingredients:
  • 400ml can coconut cream
  • 1 lemongrass stem (inner core only), finely grated
  • 5cm piece of ginger, sliced
  • Zest and juice of 2 limes
  • 24.40 gm fish sauce
  • 20.00 gm caster sugar
  • 2 spring onions, thinly sliced
  • 4 x 180g skinless salmon fillets
  • 24.00 gm sesame seeds, toasted
  • Steamed Asian greens, to serve
Instructions:
  • Heat your oven to 180°C.
  • Combine coconut cream, lemongrass, ginger, lime zest and juice, fish sauce, caster sugar, and spring onion in a saucepan. Simmer over medium heat until it reaches a gentle bubble.
  • Next, carefully transfer the fish into a baking dish and generously pour the hot coconut mixture over it. Cover the dish with foil and bake for 10-12 minutes until the fish is perfectly cooked, with a hint of rareness in the center. Finish by sprinkling sesame seeds over the dish and serve alongside some delightful steamed greens.
