Irresistible coconut walnut pound cake for all ages.
Ingredients:
  • 2 cups white sugar
  • 1 cup butter
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 cup milk
  • 3.5 ounces flaked coconut
  • 1 teaspoon coconut extract
  • 0.25 cup water
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease and flour a 10-inch tube pan.
  • Combine 2 cups of sugar with butter in a large bowl. Gently mix in the eggs one at a time, ensuring each is fully blended before adding the next.
  • Combine flour, baking powder, milk, flaked coconut, and 1 teaspoon coconut extract in a separate bowl. Beat the mixture into the creamed mixture, then pour the batter into the prepared pan.
  • Bake in the preheated oven for 1 hour or until a knife inserted in the center comes out clean. Let cool briefly on a wire rack before transferring to a cake platter.
  • Prepare the glaze by combining 1 cup of sugar, water, 1 teaspoon of coconut extract, and walnuts in a small saucepan. Allow the mixture to boil for 1 minute, then generously drizzle it over the freshly baked cake while it's still warm.
