Indulgent pound cake infused with coconut, lemon, rum, butter, and vanilla extracts, topped with a sweet glaze.
Ingredients:
  • 0.5 teaspoon baking powder
  • 1 cup milk
  • 1 teaspoon coconut extract
  • 1 teaspoon rum flavored extract
  • 1 teaspoon butter flavored extract
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 3 cups white sugar
  • 1 cup butter, softened
  • 0.5 cup shortening
  • 5 large eggs, beaten
  • 0.5 cup white sugar
  • 0.25 cup water
  • 0.5 teaspoon coconut extract
  • 0.5 teaspoon rum flavored extract
  • 0.5 teaspoon butter flavored extract
  • 0.5 teaspoon lemon extract
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) and grease a 10-inch tube pan generously.
  • Mix flour and baking powder in a medium bowl; then combine milk and extracts in a liquid measure. Set both mixtures aside.
  • In a large bowl, use an electric mixer to blend sugar, butter, and shortening until light and fluffy. Then, add the eggs one at a time, beating thoroughly after each addition. Mix in the flour and milk alternately in batches, starting and finishing with the flour. Transfer the batter into the prepared pan.
  • Bake in the preheated oven for 1 1/2 to 1 3/4 hours or until a toothpick inserted into the center comes out clean. Allow to cool in the pan on a wire rack for 10 minutes.
  • As the cake cools, prepare the glaze by combining sugar, water, and extracts in a saucepan. Bring to a boil, stirring constantly until the sugar dissolves.
  • Unmold the cake onto a wire rack with waxed paper underneath to collect any drippings. Carefully drizzle the glaze over the warm cake. Allow it to cool entirely.
