Delicious coconut cookies with raspberry jam filling or your choice of filling!
Ingredients:
  • 3.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.5 teaspoon baking powder
  • 2 cups flaked coconut
  • 1.5 cups margarine, softened
  • 0.75 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup water
  • 0.75 cup raspberry jam
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Combine the flour, baking soda, salt, baking powder, and coconut in a bowl. In a separate large bowl, cream together the margarine, brown sugar, and white sugar until smooth. Add the eggs one at a time, then mix in the vanilla extract and water with the last egg. Gradually stir in the flour mixture, adding more flour if needed to adjust the dough's consistency.
  • Shape the dough into walnut-sized balls and arrange them 2 inches apart on ungreased baking sheets. Create an indentation in each cookie using a 1/2 teaspoon measuring spoon and fill each with raspberry jam.
  • Bake in the preheated oven until lightly golden for 10-12 minutes. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
