Coconut-crusted fried shrimp with sweet and spicy orange marmalade dip.
Ingredients:
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon water
  • 1 cup coconut milk
  • 1 cup coconut flakes
  • 1 pound large shrimp, peeled and deveined, tails left intact
  • 1 cup vegetable oil for frying
  • 0.5 cup orange marmalade
  • 1 teaspoon horseradish
Instructions:
  • In separate bowls, set up the following ingredients: flour, salt, and pepper; beaten egg and water mixture; coconut milk; and coconut flakes.
  • Hold a shrimp by the tail, coat it thoroughly in flour, ensuring the tail remains clean. Then dip it in egg, coat it in flour once more, dip it in coconut milk, and finish by rolling it in coconut flakes. Place on a sheet of wax paper or a plate and repeat with the remaining shrimp.
  • 1. Heat vegetable oil in a large, deep skillet over medium heat until it crackles when water is added. 2. Cook shrimp in batches, ensuring space between each, until golden brown, about 3 to 4 minutes per side. 3. Transfer fried shrimp to a plate lined with paper towels to absorb excess oil.
  • For a delightful sauce, mix orange marmalade and horseradish in a bowl, adjusting the ratio to your liking. Enjoy as a dip with the shrimp.
