Crispy coconut shrimp with sweet & spicy honey-lime dip, a quick & healthy air fryer appetizer.
Ingredients:
  • 0.5 cup all-purpose flour
  • 1.5 teaspoons ground black pepper
  • 2 large eggs
  • 0.66666668653488 cup unsweetened flaked coconut
  • 0.33333334326744 cup panko bread crumbs
  • 12 ounces uncooked medium shrimp, peeled and deveined
  • cooking spray
  • 0.5 teaspoon kosher salt, divided
  • 0.25 cup honey
  • 0.25 cup lime juice
  • 1 serrano chile, thinly sliced
  • 2 teaspoons chopped fresh cilantro
Instructions:
  • In a shallow dish, combine flour and pepper. In another shallow dish, lightly beat eggs. In a third shallow dish, mix together coconut and panko.
  • Take each shrimp individually and coat it first in the flour mixture, then dip it in the egg, and finally coat it in the coconut mixture by pressing down gently to make it stick. Place the coated shrimp on a plate and generously coat them with cooking spray.
  • - Preheat the air fryer to 400 degrees F (200 degrees C). - Cook half of the shrimp in the air fryer for approximately 3 minutes. - Flip shrimp and cook until golden brown, around 3 more minutes. - Season with 1/4 teaspoon of salt. - Repeat process with the remaining shrimp.
  • Combine honey, lime juice, and serrano chile in a small bowl while whisking until well mixed.
  • Garnish the crispy shrimp with fresh cilantro and present alongside a tangy honey-lime dipping sauce.
