Air fryer chicken thighs with creamy peanut sauce - a quick and delicious weeknight favorite!
Ingredients:
  • 500g chicken thigh fillets, cut into 2cm pieces
  • 1 lime, rind finely grated
  • 1 garlic clove, crushed
  • 1 tsp finely grated fresh ginger
  • 4.00 gm brown sugar
  • ½ tsp ground turmeric
  • 18.40 gm vegetable oil
  • 5.30 gm soy sauce
  • 90g (1/3 cup) natural peanut butter
  • 60ml (1/4 cup) coconut milk
  • 20.00 ml kecap manis
  • 21.00 gm fresh lime juice
  • Chopped chilli, to taste (optional)
Instructions:
  • Mix zest, garlic, ginger, sugar, turmeric, oil, and soy sauce in a shallow glass or ceramic baking dish to create the marinade.
  • Place the chicken in the flavorful marinade, ensuring it is fully coated. Refrigerate for a minimum of 1 hour or let it marinate for up to 8 hours for enhanced flavor.
  • For the satay sauce, mix peanut butter, coconut milk, kecap manis, lime juice, and chili (optional) in a bowl until fully combined. Incorporate 2 tbsp water and stir until smooth.
  • Skewer the chicken onto eight 20cm pre-soaked bamboo skewers. Grease the air fryer basket with oil. Cook half the skewers in the air fryer at 180C for 5 minutes, flip, and cook for another 5 minutes until done. Repeat with the rest of the skewers. Enjoy with satay sauce.
