Coconut Swirl Brownies

Indulgent coconut-swirled from-scratch brownies.
Ingredients:
  • 6 oz semisweet baking chocolate
  • 1 cup butter or margarine
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 4 eggs
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup sugar
  • 1/2 teaspoon coconut extract
  • 1 egg
  • 3/4 cup flaked coconut
Instructions:
  • Preheat your oven to 350°F. Prepare a 9-inch square pan by lining it with foil, ensuring you leave a 1-inch overhang on 2 opposite sides, then lightly spray the foil with cooking spray.
  • In a 3-quart saucepan, gently melt chocolate and butter over medium-low heat, stirring consistently. Take off the heat. Add 2 cups of sugar, vanilla, and salt. Incorporate 4 eggs one by one, whisking until smooth. Fold in flour until well combined. Transfer batter into the pan.
  • In a medium bowl, use an electric mixer to beat cream cheese and 1/3 cup of sugar until light and fluffy. Add coconut extract and 1 egg and mix until blended. Stir in coconut. Drop spoonfuls of the mixture onto the batter, then swirl it through the brownie batter with a knife for a marbled design.
  • Bake for 45 to 50 minutes until firm. Allow to cool completely in the pan on a rack for about 2 hours. Use foil to lift out of the pan and cut into 5 rows by 4 rows. Refrigerate for storage.
