Baked homemade doughnuts with sugar glaze and coconut flakes topping.
Ingredients:
  • 0.75 cup rice flour
  • 0.25 cup garbanzo flour
  • 0.25 cup potato starch
  • 0.25 cup arrowroot powder
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon xanthan gum
  • 0.25 teaspoon salt
  • 0.5 cup So Delicious® Dairy Free Vanilla Coconut Milk
  • 1 cup organic raw cane sugar
  • 0.33333334326744 cup coconut oil
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 0.5 cup unsweetened coconut flakes
  • 0.5 cup powdered sugar
  • 1 tablespoon hot water, plus additional if needed
  • 0.5 cup unsweetened coconut flakes, or more as needed
Instructions:
  • Prepare your 6-donut pan by greasing with aromatic coconut oil and then effortlessly preheat your oven to a perfect 350 degrees F.
  • Combine all the flour ingredients - rice, garbanzo, potato starch, arrowroot, baking powder, baking soda, xanthan gum, and salt - by sifting them together. Whisk the mixture in a bowl and set it aside.
  • In a medium pot, gently warm milk and coconut oil over low heat until the coconut oil is melted (avoid boiling). Stir with a wooden spoon as it warms. Remove from heat once the coconut oil melts, then mix in the sugar until fully dissolved. Stir in apple sauce and vanilla extract until well combined.
  • Combine the liquid mixture with the dry ingredients, gently mixing until smooth. If clumps remain, use an immersion blender to ensure a silky batter consistency.
  • Combine coconut flakes into the mixture using a wooden spoon. Pour the batter into a greased donut pan, filling it halfway to accommodate for the batter rising.
  • After baking for 15 minutes at 350 degrees F, let the donuts cool for 15 to 30 minutes. Carefully scrape the sides of each well, then flip the pan over to release the donuts. Use a toothpick if needed to lift them out easily.
  • Prepare the glaze by mixing powdered sugar in a small bowl with hot water, adding 1 tablespoon at a time. Thoroughly coat the donuts in the glaze, then dip them in coconut flakes to cover completely. Recipe makes 6-8 donuts.
